Sun-Dried Tomato Gnocchi

Description

A deliciously smooth sun-dried tomato sauce with gnocchi. Serves 2.

  1. Start by frying off the onion for 3 minutes in some oil. Season with salt and pepper.
  2. Add in the garlic and fry for another 30 seconds before adding in the tomato purée and stirring to combine.
  3. Tip in the sun-dried tomatoes as well as their oil, then add the double cream and stir to combine, cook for a minute.
  4. Add all of that to a blender and blitz until smooth, you can add water to make the sauce a little thinner if desired.
  5. In the same pan, fry the gnocchi for 2/3 mins until slightly toasted and then pour in the sauce.
  6. Chop up some basil and add to the sauce. Season to taste. Serve up the gnocchi and top with more basil and optional mozzarella or chilli flakes (if you want it spicy).
